About our Legacy Beef Family

Area cattle producers and Legacy Beef, LLC owners, Derek Nuxoll, Clay Groom, Miles Hatter and Larry Hatter saw a need for the establishment of a locally based meat processing facility with locally sourced beef, pork and lamb. 

Having convenient access to a USDA-certified beef processing facility was critical so for now, the team purchased a USDA facility located in Clarkston, WA.

The plan moving forward is to expand offerings into the owner families home base of Grangeville, Idaho.  Grangeville is the County Seat of Idaho County and positioned at the foothill of the Bitterroot chain of the Rocky Mountains. 

Legacy Beef operations will provide the USDA-branded meat that can be sold by the piece and pound at local grocery stores. With this, consumers would be seeing custom cuts of beef produced by local ranchers.

“This has become a need more recently because people are becoming more aware of what they’re eating than they used to be,” Nuxoll said. “COVID-19 had a huge impact on that,” he continued, for consumers questioning where their beef is coming from; what’s in it, what has it been around. “They want to have a relationship with the owners who grow these animals, the places they cut them up. They want to know they are getting sanitary meat, and they want to support locals.”

Our Mission

At Legacy Beef, our mission is to provide North Central Idaho with premium, locally-sourced and processed beef, pork, and goat / sheep, all raised with care by Idaho ranching families. 

We’re dedicated to fostering stability in our region by connecting the community to sustainable, wholesome meat protein that’s processed and consumed right here in North Central Idaho.  By narrowing the food supply chain, we are able to ensure higher quality products, transparency, and sustainability in every step, empowering our communities with the knowledge that their meat is locally produced and sourced with integrity.

Our work is rooted in the values of community, family, and friendship, honoring the rural heritage and hard work of Idaho’s ranching families. We aim to provide Idaho’s rural communities with a dependable avenue for continuing an important way of life, enabling all who live in these local communities to not only survive but to thrive!   

Through this commitment to local sourcing, Legacy Beef strengthens the foundation of a self-sufficient, sustainable food ecosystem for our region, so that future generations can share in the rich heritage and resources of Idaho.
